Broccoli Salad with Cashew Nuts and Bacon
You see this Broccoli Salad frequently in the South. It’s a staple in groceries and on salad bars. And homemade versions show up at almost every event people bring food to – parties, potlucks, football tailgating, etc. The creamy sweet and tangy dressing poured over the crunchy vegetables is always tasty and always popular.
But most recipes for Broccoli Salad are made with sunflower seeds. I don’t know about you, but while I love Broccoli Salad I’m not a big fan of the seeds.
So when I saw this salad at a recent get-together, I knew I had the answer. And a new recipe. All the classic ingredients are there and the addition of cashews adds a crunch and depth of flavor that the other recipes can’t match.
Oh, and I upped the amount of bacon, too. I am from the South, after all.
Broccoli Salad with Cashew Nuts and Bacon Recipe
Materials
- 5 cups chopped fresh Broccoli
- 1/2 cup Raisins
- 1 cup Cashew Nuts
- 1/4 cup chopped Red Onion
- 3 tablespoons Apple Cider Vinegar
- 2 tablespoons Sugar
- 1 cup Mayonnaise
- 10 slices Bacon cooked and crumbled or chopped finely
- Salt and freshly ground Black Pepper to taste
Instructions
- In a large salad bowl, combine broccoli, raisins, cashews and onions.
- In a small bowl, combine vinegar, sugar and mayonnaise.
- Pour mayo mixture over broccoli. Toss to coat.
- Add in bacon. Toss gently to coat.
- Taste. Add salt and pepper, to taste.
- Store, covered, in the refrigerator, until ready to serve.
