Cucumber, Tomato and Feta Salad Recipe

Materials

  • 2 small Cucumbers cut in 1/2 lengthwise twice, then cut into slices
  • 1 small bunch fresh Dill picked off stems (discard stemand roughly chopped, or 1 teaspoon dried Dill Weed
  • 1 small bunch fresh Mint chopped
  • 12 or so Cherry or Grape Tomatoes halved
  • 1/2 cup minced Red or Sweet Onion
  • 1 teaspoon Olive Oil
  • 1/2 cup crumbled or cubed Feta Cheese
  • Salt and freshly ground Black Pepper to taste

Instructions

  • Combine all ingredients, except feta, salt and pepper, in a bowl. Mix well.
  • Add feta. Toss lightly to mix.
  • Taste. Add salt and pepper, to taste.
  • Serve immediately, or chill, covered, in the refrigerator, until ready to serve.
