Salt-Crusted Rainbow Potatoes Recipe

Salt-Crusted Rainbow Potatoes are super simple to make. With only 2 ingredients - Potatoes and Salt - and about 30 minutes you can make this delicious side dish for your family.

Materials

  • 1 1/2 pounds Rainbow Potatoes
  • 3/4 tablespoon Salt

Instructions

  • Wash but do not peel or cut the potatoes.
  • Place potatoes in a large pot.
  • Add enough water to just cover the potatoes.
  • Add salt.
  • Bring water to a boil.
  • Cook on high, undisturbed, for about 30 minutes or until water has evaporated completely. The potatoes should have a thin white film or salt on them and be tender (test with a fork).
  • Serve with a dipping sauce.
